I am looking for a good slow setting epoxy. I am making a Roubo Workbench and need to glue the whole project up at one time.

This epoxy we sell:
System Three G-2 Epoxy Kit
, has an open time of about 60 minutes (at 70 degrees).
Should you need more working time, contact the two big manufacturer's of epoxy, System Three and West System. They may have epoxy formulas that offer even longer open times.
